The Autumn of Pumpkin: Let Me See Your Pumpkin Roll!

Please forgive. I could not resist that title. I hope that you get it...you know, the Tootsie Roll song, the inappropriate rap from several years back? Yeah, I'm gangsta. :) Don't be afraid to shake your bootie just a tad in remembrance...

So, here are the deets for The Pumpkin Roll. I took it to work and everyone seemed to love it:

Cake:
1/4 cup powdered sugar
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup canned pumpkin

Filling:
1 pkg. cream cheese (8 oz.), at room temp.
1 cup powdered sugar
6 tablespoons butter
1 tsp. vanilla
a little more powdered sugar for sprinkling

These directions are a little weird, so please stick with...anything involving putting a towel in your recipe is slightly sketch to me.. :)

1.) Preheat over to 375. Grease 10 x 15 jelly roll panl. Line with wax paper. Sprinkle a thin, (clean) cotton kitchen towel generously with powdered sugar.
2.) Combine flour, baking powder, baking soda, cinnamon, cloves and salt in a small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread everthing evenly into prepared pan.
3.) Bake for 11 to 15 minutes or until top of cake springs when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack. Cut in to slices and eat. Just kidding. Don't eat the towel, silly.
4.) Now on to the filling. Beat cream cheese, 1 cup powdered sugar, butter, and vanilla extract in small mixer bowl until smooth. Carefully unroll cake.
5.) Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.
